Variantes et astuces d’ingrédients

In a second bowl, beat the eggs with the sugar until the mixture turns pale. Add the melted butter and the milk, then mix. Place your chocolate chip cakes in the preheated oven and bake for around 20 to 25 minutes, or until baking is judged optimal. Leave your chocolate chip cakes to cool in the tin for around 10 minutes before turning them out and letting them cool completely on a wire rack.

Made in our Normandy biscuit workshop with Isigny PDO Butter, simple ingredients, with no preservatives and no artificial flavourings, it delivers that authentic “homemade” taste... It's moist and generously packed with chocolate chips. Choose a good-quality non-stick metal cake tin for even baking and easy unmoulding. If you prefer a silicone tin, make sure it's good quality to prevent it from warping and the cakes from baking unevenly. Whatever your preference, be sure to lightly butter and flour the tin before pouring in the batter to ensure easy unmoulding. Finally, also choose your tin according to the size of your batter.

Making chocolate chip cakes may seem simple, but several common mistakes can affect the final result. To stop the chocolate chips sinking to the bottom of the cake during baking, mix the chocolate chips with a tablespoon of flour before folding them into the batter. Using ingredients straight from the fridge will affect the texture of your cakes, as the batter may mix unevenly. Make sure all your ingredients (butter, eggs, milk...) are at room temperature before you start preparing. Likewise, if you melt your butter in the microwave, wait for it to cool down before adding it to your batter. If you mix the batter for too long after adding the flour, the cake can become dense and tough because the gluten in the flour develops too much. Mix the batter just enough to incorporate the dry ingredients into the wet ingredients. Remember to sift your flour as well as your baking powder, as forgetting this step can quickly lead to lumps forming in your batter, affecting the texture of the cake. Putting your cakes in a non-preheated oven will result in uneven baking and prevent the cakes from rising properly. Before removing your cakes from the oven, always check that they are baked with the blade of a knife or a toothpick inserted into the centre of the cake. If it comes out clean or with a few moist crumbs, the cake is done. Once baked, avoid unmoulding the cakes immediately or leaving them in the tin for too long. Cakes can break when unmoulded or become too damp if left in the tin too long. To achieve really moist chocolate chip cakes, the quality of the ingredients used is essential. Use good-quality butter at room temperature. Also use good-quality eggs at room temperature. Finally, you can add whole milk or plain yoghurt to the batter.
